Dassai 50 Junmai Daiginjo ($27.99): This premium sake is milled down to 50%. It is elegant and fresh. It shows a slight sweetness with very floral aromas. The palate is medium bodied with perfect balance of nuttiness and candy with a hint of honeydew.

Dassai 39 Junmai Daiginjo ($42.99): This Junmai Daiginjo is even more refined than the 50 as the rice is milled down to 39%.  This sake is richer and creamier than the 50, with aromas of apple and white flowers.  The palate delivers more bright fruit but balancing acidity and an extremely long finish.

Dassai 23 Junmai Daiginjo ($79.95): The 23% of milled rice left in this brew is among the most polished sake made.  It is truly unrivaled in the world of Sake.  The nose is layered with flowers, peaches and strawberries.  The palate is rich, intense, and complex with notes of melon, coconut, creme brulee, and pears.  The finish is long, dry, and extraordinarily smooth.
